Water consumption in the catering sector is considerable. It is reckoned that approximately 10 litres of water is used on average per mealtime; this is first used as clean water and then accumulates as waste water.

In the catering sector, water is used by dishwashers and steam generators, for example. These require softened or even demineralised water. Drinking water is used in the meals themselves. Other water circulation systems can be found in air conditioning units, for example.
